Yea pickles. Every time I try to can pickles they come out soft. My husband likes the crispy pickles like Clausens. Those look wonderful and you really got a large batch. Have fun eating them.

Doesn't that look and feel great! No wonder you sounded tired when I called this afternoon. Lucy Stern, if you over process your pickles they will get soft, but if you under process them they'll stay crisp. Put a tub in the fridge that are unprocesesed. Your hubby will love them!

Hope they all sealed. My pickle making days seem to be over. Can't get motivated.

Only 2 jars didn't seal, so that's not too bad.

Shuana, do you mean that you just pour the brine over the dills and set the them in the fridge? How long does it take until you can eat them? I will have to try that. Too bad I didn't know that trick because I had 6 little dills that didn't fit in the jars. My dad ate them.

You can eat them within minutes. The hot brine cooks them just a tad. They are quite mild right away. Rick's family doesn't even put them in the fridge. Just a big barrel of pickles sitting in the door way! I like mine cold and crisp so I just wait until they have cooled in the fridge.

The crispy pickles you buy at the store are kept in the refridgerated section--this is because they are underprocessed--so not safe to keep for a long period of time.
